Honey Roasted Sweet Potatoes

Ingredients
  

  • 3 –4 medium sweet potatoes peeled and cubed
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground cinnamon optional
  • Pinch of cayenne or smoked paprika optional

Method
 

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Cut sweet potatoes into 1-inch cubes and pat them dry with a towel.
  3. Toss sweet potatoes with olive oil, salt, pepper, and optional spices in a bowl.
  4. Spread evenly on the baking sheet in a single layer, leaving space between pieces.
  5. Roast for 20 minutes, then remove and drizzle with honey. Toss gently.
  6. Return to oven and roast an additional 10–15 minutes until caramelized and crisp.
  7. Serve warm or let cool slightly for salads or meal prep.

Notes

  • For vegan version, substitute maple syrup for honey.
