Ingredients
  

Dry Ingredients
  • 4 cups all-purpose flour
  • 1/4 cup sugar Can be adjusted to taste
  • 2.25 teaspoons active dry yeast 1 packet
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon Use fresh for best flavor
  • 1/2 teaspoon ground nutmeg Use fresh for best flavor
Wet Ingredients
  • 1/2 cup milk Warm
  • 1/4 cup water Warm
  • 1/4 cup unsalted butter Melted
  • 2 large eggs Room temperature
  • 1 egg for egg wash
Other Ingredients
  • 1 cup mixed dried fruit (raisins, currants, etc.)
  • 1/4 cup lemon zest
  • to taste icing for decoration (powdered sugar and water)

Method
 

Preparation
  1. Mix together the flour, sugar, yeast, salt, cinnamon, and nutmeg in a bowl.
  2. In a saucepan, combine the milk, water, and butter, heating until warm.
  3. Pour the warm mixture into the dry ingredients and stir to form a dough.
  4. Add in the eggs and mixed dried fruit, mixing until smooth.
  5. Knead the mixture for about ten minutes on a floured surface until it becomes elastic.
Rising
  1. Place the dough in a greased bowl, cover it, and allow it to rise for about an hour or until doubled in size.
  2. Punch the dough down and divide it into twelve portions, shaping each into a bun.
  3. Arrange the buns on a baking tray and let them rise again for thirty minutes.
Baking
  1. Preheat your oven to 375°F (190°C).
  2. Brush the buns with a beaten egg and pipe an icing cross on top.
  3. Bake until golden brown, approximately 20-25 minutes.
  4. Let them cool and drizzle with icing for decoration.
