Ingredients
  

Dough Ingredients
  • 4 cups all-purpose flour Sifted
  • 1/2 cup sugar Granulated sugar
  • 2 teaspoons active dry yeast Ensure it's fresh
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 1 cup milk, warmed Warm to activate yeast
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup mixed dried fruit (raisins, currants, or sultanas)
  • 1/2 cup candied peel
For the Cross
  • 1/2 cup flour Mix with water to make a paste
For the Glaze
  • 1/4 cup apricot jam For brushing on tops

Method
 

Preparation
  1. Activate the yeast by mixing it in warm milk with a sprinkle of sugar.
  2. In a separate bowl, whisk together flour, sugar, spices, and salt.
  3. Combine the two mixtures, adding melted butter and eggs until a dough forms.
  4. Knead the dough for about 10 minutes until smooth, then let it rise in a warm area until doubled in size.
  5. Shape the dough into individual buns and let them rise again while preheating the oven to 375°F (190°C).
  6. Once risen, create a cross on top of each bun using the flour-water paste.
  7. Bake in the preheated oven for 20-25 minutes until golden brown.
  8. Brush the baked buns with heated apricot jam to create a shiny glaze.
