  • 4 cups all-purpose flour Can substitute whole wheat flour for a nuttier taste.
  • 1 packet active dry yeast (2 ¼ teaspoons) Ensure yeast is fresh for best results.
  • 1 cup milk, warmed Check temperature with a thermometer.
  • ½ cup sugar Adjust based on preference.
  • ½ teaspoon salt
  • 2 teaspoons mixed spice or cinnamon Use freshly grated for enhanced flavor.
  • ½ cup butter, softened
  • 2 large eggs Room temperature is preferable.
  • 1 cup mixed dried fruits (currants, raisins) Choose high-quality fruits.
  • 1 zest of 1 lemon Organic preferred for aroma.
Glaze Ingredients
  • 1 cup powdered sugar
  • 2 tablespoons milk Add more for thinner glaze.

Method
 

Preparation
  1. Dissolve the yeast in warm milk and let it sit for a few minutes.
  2. In a large bowl, mix the flour, sugar, salt, and mixed spice.
  3. Add in the butter, eggs, and yeast mixture, mixing until combined.
  4. Knead the dough until it is smooth and elastic.
  5. Place in a greased bowl, cover, and allow to rise in a warm environment until doubled, about 1-2 hours.
Baking
  1. Shape the risen dough into buns and place them on a baking sheet.
  2. Preheat the oven to 375°F (190°C).
  3. Allow the buns to rise again until puffy.
  4. Bake in the preheated oven for 20-25 minutes until golden brown.
  5. Mix powdered sugar and milk to create glaze and drizzle over the warm buns.
