- Heat a large skillet over medium. Add the olive oil and swirl to coat.
- Add the minced garlic and cook for 45–60 seconds, stirring, until fragrant but not brown.
- Add the Lil Smokies in a single layer and cook for 5–7 minutes, turning occasionally, until evenly browned and heated through.
- In a small bowl, whisk together the honey, hot sauce, and soy sauce until smooth.
- Pour the sauce over the sausages and stir to coat. Reduce heat to medium-low and let simmer for 3–5 minutes, stirring now and then, until the sauce is slightly thickened and glossy.
- Remove from heat. Sprinkle with red pepper flakes and chopped parsley or green onions if using. Serve warm with toothpicks.
