Ingredients
  

  • 2 cups old-fashioned oats
  • 1 cup all-purpose flour (or half whole wheat)
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 0.5 tsp salt
  • 0.75 cup unsalted butter, softened
  • 0.75 cup brown sugar
  • 0.25 cup white sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2–3 tbsp milk (for glaze)

Method
 

  1. Pulse oats briefly in a blender to create a mix of fine and whole pieces.
  2. In a large bowl, combine oats, flour, baking soda, cinnamon, and salt.
  3. In another bowl, beat butter with brown and white sugar until creamy.
  4. Add the egg and vanilla to the creamed mixture and mix until smooth.
  5. Gradually add dry ingredients to wet ingredients until a dough forms.
  6. Scoop dough onto parchment-lined baking sheets.
  7. Bake at 350°F (175°C) for 10–12 minutes until edges are golden.
  8. Let cookies cool completely on a wire rack before glazing.
  9. Whisk powdered sugar and milk until smooth. Dip or drizzle over cooled cookies.
