Irresistible Apple Fritter Bites

Ingredients
  

  • 2 large apples, diced (Granny Smith or Honeycrisp)
  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg (optional)
  • 1/2 tsp salt
  • 1 large egg, beaten
  • 1/2 cup milk (whole or 2%)
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • as needed vegetable oil (for frying, 2–3 inches deep)
  • 1 1/2 cups powdered sugar (for glaze)
  • 3 tbsp milk (for glaze)
  • 1/2 tsp vanilla extract (for glaze)

Method
 

  1. Peel, core, and finely dice the apples. Set aside.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, mix egg, milk, melted butter, and vanilla extract until smooth.
  4. Combine wet and dry mixtures. Stir until thick and just combined. Fold in the diced apples.
  5. Heat 2–3 inches of vegetable oil in a heavy pot to 350°F (175°C).
  6. Drop batter into hot oil by spoonfuls. Fry 3–5 minutes, turning for even golden color.
  7. Remove fritters and drain on a wire rack lined with paper towels.
  8. Whisk together powdered sugar, milk, and vanilla for glaze.
  9. Dip or drizzle warm fritters with glaze. Serve immediately.

Notes

For best results, dice apples finely and glaze while warm. To bake instead of fry, cook at 375°F for 12–15 minutes. Freeze unglazed and reheat before serving. Use Granny Smith for tartness, Honeycrisp for sweetness — or both!
