- Peel, core, and finely dice the apples. Set aside.
- In a large bowl, whisk together flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt.
- In a separate bowl, mix egg, milk, melted butter, and vanilla extract until smooth.
- Combine wet and dry mixtures. Stir until thick and just combined. Fold in the diced apples.
- Heat 2–3 inches of vegetable oil in a heavy pot to 350°F (175°C).
- Drop batter into hot oil by spoonfuls. Fry 3–5 minutes, turning for even golden color.
- Remove fritters and drain on a wire rack lined with paper towels.
- Whisk together powdered sugar, milk, and vanilla for glaze.
- Dip or drizzle warm fritters with glaze. Serve immediately.

Notes
For best results, dice apples finely and glaze while warm. To bake instead of fry, cook at 375°F for 12–15 minutes. Freeze unglazed and reheat before serving. Use Granny Smith for tartness, Honeycrisp for sweetness — or both!
