Method
- Bring 1.5 cups of water to a boil, then turn off the heat.
- Add kombu to steep in the hot water for 5 minutes.
- Remove the kombu and add grated ginger and lemon slice.
- Let steep another 2–3 minutes.
- Whisk in the matcha powder until smooth.
- Add the umeboshi at the end and stir gently.
- Serve warm, preferably in the morning on an empty stomach.
