Pasta and Veggies
  • 8 oz pasta (fusilli or rotini)
  • 2 cups fresh corn (or canned/frozen) Fresh corn is ideal.
  • 1 cup cherry tomatoes, halved Opt for vibrant tomatoes.
  • 1/4 cup red onion, finely chopped
  • 1/2 cup bell pepper, diced Choose crisp peppers.
  • 1/4 cup cilantro, chopped Look for bright green leaves.
Dressing
  • 1/4 cup lime juice Freshly squeezed is best.
  • 1/4 cup olive oil
  • 1 tsp cumin
  • Salt and pepper to taste

Method
 

Preparation
  1. Begin by boiling the pasta according to the package directions. Once cooked, drain and set aside to cool.
  2. In a large mixing bowl, toss in the corn, halved cherry tomatoes, chopped red onion, diced bell pepper, and cilantro.
  3. In a separate bowl, whisk together the lime juice, olive oil, cumin, and season with salt and pepper.
  4. Pour the dressing over the veggie mixture, and add the cooled pasta. Mix everything gently until well combined.
  5. Let the salad chill in the refrigerator for at least 30 minutes before serving.
