Ingredients
  

Wet Ingredients
  • 4 ounces full-fat cream cheese Make sure it's at room temperature.
  • 1 large egg
  • 1.5 teaspoons vanilla extract
Dry Ingredients
  • 3/4 cup blanched almond flour Can substitute with other low-carb flours.
  • 1.5 tablespoons coconut flour
  • 1/2 cup granulated sweetener Use erythritol or stevia.
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt

Method
 

Preparation
  1. If using a hand mixer, cream the softened cream cheese. Gradually add the egg, mixing well after each addition. If you're using a blender, combine all wet ingredients and blend until smooth.
  2. Once the cream cheese and egg are mixed, add the vanilla extract and set it aside.
  3. In another bowl, mix all the dry ingredients: almond flour, coconut flour, baking powder, and salt.
  4. Combine the wet and dry mixtures to create a cookie dough. Cover the bowl and refrigerate for at least one hour.
Baking
  1. Preheat your oven to 350°F (175°C).
  2. After refrigerating, scoop out the dough to form 11 cookie mounds on a baking sheet. Be careful not to flatten them.
  3. Bake for 15 minutes or until lightly golden.
  4. Let them cool on the baking sheet for at least 15 minutes, and if desired, dust with powdered sweetener for decoration.

Notes
