Preparation
- If using a hand mixer, cream the softened cream cheese. Gradually add the egg, mixing well after each addition. If you're using a blender, combine all wet ingredients and blend until smooth.
- Once the cream cheese and egg are mixed, add the vanilla extract and set it aside.
- In another bowl, mix all the dry ingredients: almond flour, coconut flour, baking powder, and salt.
- Combine the wet and dry mixtures to create a cookie dough. Cover the bowl and refrigerate for at least one hour.
Baking
- Preheat your oven to 350°F (175°C).
- After refrigerating, scoop out the dough to form 11 cookie mounds on a baking sheet. Be careful not to flatten them.
- Bake for 15 minutes or until lightly golden.
- Let them cool on the baking sheet for at least 15 minutes, and if desired, dust with powdered sweetener for decoration.
