- In a mixing bowl, combine the peanut butter, erythritol, egg, vanilla extract, and baking soda. Mix until well incorporated.
- Scoop out small balls of dough and place them on a baking sheet lined with parchment paper, spacing them evenly.
Baking
- Bake for 10-12 minutes until the cookies are set and slightly golden around the edges.
- Once out of the oven, gently press a chocolate kiss or sugar-free candy into the center of each cookie while still warm.
- Allow to cool completely before serving.
