  • 1/2 cup granulated erythritol or sweetener of choice 1:1 substitute with other low-carb sweeteners like monk fruit or stevia is acceptable.
  • 1 large egg Can be substituted with flaxseed meal mixed with water for a vegan option.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • as needed chocolate kisses or sugar-free chocolate candies for topping Options can be adjusted based on preference.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the peanut butter, erythritol, egg, vanilla extract, and baking soda. Mix until well incorporated.
  3. Scoop out small balls of dough and place them on a baking sheet lined with parchment paper, spacing them evenly.
Baking
  1. Bake for 10-12 minutes until the cookies are set and slightly golden around the edges.
  2. Once out of the oven, gently press a chocolate kiss or sugar-free candy into the center of each cookie while still warm.
  3. Allow to cool completely before serving.
