Ingredients
  

For the crust
  • 2 cups 2 cups Flour All-purpose flour
  • 1/2 cup 1/2 cup Sugar Granulated sugar
  • 1/4 teaspoon 1/4 teaspoon salt Fine salt
  • 2 sticks 2 sticks (1 Cup) Salted Butter, Cut Into Small Cubes Use salted butter for best flavor
For the filling
  • 1 cup Zest And Juice Of 4 Medium-sized Lemons — about 1 cup of lemon juice Fresh lemons preferred, can substitute bottled lemon juice
  • 1-1/2 cups 1-1/2 cup Sugar Granulated sugar
  • 1/4 cup 1/4 cup Flour All-purpose flour
  • 4 whole 4 whole Large Eggs Large eggs at room temperature
  • Powdered Sugar Powdered Sugar, For Sifting For dusting on top before serving

Method
 

Preparation of the Crust
  1. Preheat your oven to 350°F (175°C). Grease a 9-by-13-inch pan with butter.
  2. In a mixing bowl, combine 2 cups of flour, 1/2 cup of sugar, and 1/4 teaspoon of salt.
  3. Add 2 sticks of cold, cubed butter to the flour mixture and blend with a pastry cutter until it resembles fine crumbs.
  4. Press the mixture firmly into the prepared pan and bake for approximately 20 minutes or until golden around the edges.
Preparation of the Filling
  1. In another bowl, whisk together 1-1/2 cups of sugar and 1/4 cup of flour.
  2. Add 4 large eggs and beat until fully combined.
  3. Incorporate the zest and juice of the lemons and mix until the filling is smooth.
  4. Pour the lemon mixture over the baked crust.
  5. Return the pan to the oven and bake for 20-30 minutes or until the filling no longer jiggles when shaken.
  6. Let the bars cool at room temperature before refrigerating for at least 2 hours.
Serving
  1. Dust the top with powdered sugar before cutting into squares and serving.

Notes
