Method
Preparation of the Crust
- Preheat your oven to 350°F (175°C). Grease a 9-by-13-inch pan with butter.
- In a mixing bowl, combine 2 cups of flour, 1/2 cup of sugar, and 1/4 teaspoon of salt.
- Add 2 sticks of cold, cubed butter to the flour mixture and blend with a pastry cutter until it resembles fine crumbs.
- Press the mixture firmly into the prepared pan and bake for approximately 20 minutes or until golden around the edges.
Preparation of the Filling
- In another bowl, whisk together 1-1/2 cups of sugar and 1/4 cup of flour.
- Add 4 large eggs and beat until fully combined.
- Incorporate the zest and juice of the lemons and mix until the filling is smooth.
- Pour the lemon mixture over the baked crust.
- Return the pan to the oven and bake for 20-30 minutes or until the filling no longer jiggles when shaken.
- Let the bars cool at room temperature before refrigerating for at least 2 hours.
Serving
- Dust the top with powdered sugar before cutting into squares and serving.
