Preparation
- Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking pan.
- In a medium bowl, combine the flour and powdered sugar, then cut in the butter until the mixture resembles coarse crumbs.
- Press this mixture firmly into the bottom of the prepared pan and bake for about 15 minutes, or until it’s lightly golden.
Making the Filling
- In another bowl, whisk together the granulated sugar, eggs, fresh lemon juice, lemon zest, and baking powder until well mixed.
Baking the Bars
- Once the crust is ready, pour the lemon mixture over it and return to the oven.
- Bake for an additional 20-25 minutes until the filling is set.
- Allow them to cool completely, then dust with powdered sugar before cutting into bars and serving.
