Ingredients
  

For the Crust
  • 1 cup all-purpose flour Ensure it's measured correctly for best texture.
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter Use at room temperature for easier mixing.
For the Filling
  • 1 cup granulated sugar
  • 2 large eggs Room temperature is best for mixing.
  • 1/4 cup fresh lemon juice Freshly squeezed for maximum flavor.
  • 1 teaspoon lemon zest Use a zester for the best results.
  • 1/2 teaspoon baking powder

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking pan.
  2. In a medium bowl, combine the flour and powdered sugar, then cut in the butter until the mixture resembles coarse crumbs.
  3. Press this mixture firmly into the bottom of the prepared pan and bake for about 15 minutes, or until it’s lightly golden.
Making the Filling
  1. In another bowl, whisk together the granulated sugar, eggs, fresh lemon juice, lemon zest, and baking powder until well mixed.
Baking the Bars
  1. Once the crust is ready, pour the lemon mixture over it and return to the oven.
  2. Bake for an additional 20-25 minutes until the filling is set.
  3. Allow them to cool completely, then dust with powdered sugar before cutting into bars and serving.
