  • 1 cup fresh blueberries Plus extra for garnish.
  • 1 tablespoon lemon zest From about 1 lemon.
  • 2 tablespoons honey Or maple syrup for a vegan option.
  • 1/2 cup almond flour Can use other types of flour.
  • 1 teaspoon vanilla extract
  • a pinch of salt

Method
 

Preparation
  1. In a mixing bowl, gently combine the cottage cheese, blueberries, lemon zest, honey, almond flour, vanilla extract, and salt. Be careful not to crush the blueberries.
  2. Chill the mixture in the refrigerator for 15-20 minutes to firm it up.
  3. Use a tablespoon to scoop portions and roll them into compact balls.
  4. Place the bites on a parchment-lined baking sheet.
  5. Optional: Preheat your oven to 325°F (160°C) and bake for 8-10 minutes for a lightly toasted exterior.
  6. Let them cool slightly, drizzle with honey if desired, and garnish with extra blueberries.
