  • 2 tbsp cream cheese
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp vanilla extract
  • 1–2 tsp honey or maple syrup (to taste)
  • 1 pinch salt (optional)
  • fresh berries, crushed graham crackers, or almonds (for topping, optional)

Method
 

  1. In a medium bowl, combine rolled oats, Greek yogurt, almond milk, and chia seeds. Stir until evenly mixed.
  2. Whisk in the cream cheese, lemon juice, lemon zest, and vanilla extract until the mixture is smooth and creamy.
  3. Add honey or maple syrup to sweeten. Taste and adjust to your preference.
  4. Spoon the mixture into jars or containers. Seal tightly and refrigerate for at least 6 hours or overnight.
  5. Before serving, stir the oats. Top with fresh berries, crushed graham crackers, or almonds as desired.
