Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream the granulated sugar with the softened butter until the mixture is fluffy and light.
  3. Incorporate the egg, followed by the lemon zest and lemon juice, mixing until everything is well combined.
  4. In a separate bowl, whisk the all-purpose flour, baking powder, and salt together.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Chill the dough for approximately 30 minutes in the refrigerator.
Baking
  1. Roll the chilled dough into 1-inch balls and coat each ball in powdered sugar until thoroughly covered.
  2. Arrange them on a baking sheet lined with parchment paper, leaving about 2 inches of space between each cookie.
  3. Bake for around 10-12 minutes or until the edges feel set and the tops develop a beautiful crinkle.
  4. Let them cool on the baking sheet for a few minutes before moving them to a wire rack to finish cooling completely.
