Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream the granulated sugar with the softened butter until the mixture is fluffy and light.
- Incorporate the egg, followed by the lemon zest and lemon juice, mixing until everything is well combined.
- In a separate bowl, whisk the all-purpose flour, baking powder, and salt together.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Chill the dough for approximately 30 minutes in the refrigerator.
Baking
- Roll the chilled dough into 1-inch balls and coat each ball in powdered sugar until thoroughly covered.
- Arrange them on a baking sheet lined with parchment paper, leaving about 2 inches of space between each cookie.
- Bake for around 10-12 minutes or until the edges feel set and the tops develop a beautiful crinkle.
- Let them cool on the baking sheet for a few minutes before moving them to a wire rack to finish cooling completely.
