  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened Use room temperature butter for better mixing.
Filling Ingredients
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh lemon juice Always use fresh lemons for the best flavor.
  • 1 teaspoon baking powder
  • Zest of 1 lemon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a medium bowl, combine the flour, powdered sugar, and salt. Incorporate the softened butter and mix until the texture resembles coarse crumbs.
  3. Press this crumb mixture firmly into the bottom of the greased pan and bake for 15 minutes.
Filling
  1. In another bowl, whisk together granulated sugar, eggs, vanilla extract, fresh lemon juice, lemon zest, and baking powder until completely smooth.
  2. Pour the lemon mixture over the crust that is already baked.
  3. Return to the oven and bake for an additional 20-25 minutes, or until the filling is set and lightly golden.
  4. Let it cool before slicing into bars for serving.
