Preparation
- Preheat your oven to 350°F (175°C) and grease a baking pan.
- In a medium bowl, combine the flour, powdered sugar, and salt. Incorporate the softened butter and mix until the texture resembles coarse crumbs.
- Press this crumb mixture firmly into the bottom of the greased pan and bake for 15 minutes.
Filling
- In another bowl, whisk together granulated sugar, eggs, vanilla extract, fresh lemon juice, lemon zest, and baking powder until completely smooth.
- Pour the lemon mixture over the crust that is already baked.
- Return to the oven and bake for an additional 20-25 minutes, or until the filling is set and lightly golden.
- Let it cool before slicing into bars for serving.
