Preparation
- Preheat your oven to 350°F (175°C).
- Prepare an 8×8-inch baking pan by lining it with parchment paper and spritzing with nonstick spray.
- In one bowl, whisk together the all-purpose flour, old-fashioned oats, salt, and baking soda.
- In another bowl, mix together the melted butter, light brown sugar, and vanilla extract.
- Combine both mixtures, keeping 3/4 cup of the crumby blend aside for a topping.
- Press the rest into your prepared baking pan, ensuring an even layer.
Baking
- Bake the crust for 10 minutes.
- While the crust is baking, prepare the filling by whisking the sweetened condensed milk, sour cream, egg yolk, lemon juice, zest, and additional vanilla in a bowl until it’s smooth.
- After the crust has baked, pour the lemon filling over it and sprinkle the reserved crumbs on top.
- Return the pan to the oven and bake for another 17 to 20 minutes or until the top is golden brown.
- Allow it to cool completely before cutting into squares for serving.
