Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8×8-inch baking pan by lining it with parchment paper and spritzing with nonstick spray.
  3. In one bowl, whisk together the all-purpose flour, old-fashioned oats, salt, and baking soda.
  4. In another bowl, mix together the melted butter, light brown sugar, and vanilla extract.
  5. Combine both mixtures, keeping 3/4 cup of the crumby blend aside for a topping.
  6. Press the rest into your prepared baking pan, ensuring an even layer.
Baking
  1. Bake the crust for 10 minutes.
  2. While the crust is baking, prepare the filling by whisking the sweetened condensed milk, sour cream, egg yolk, lemon juice, zest, and additional vanilla in a bowl until it’s smooth.
  3. After the crust has baked, pour the lemon filling over it and sprinkle the reserved crumbs on top.
  4. Return the pan to the oven and bake for another 17 to 20 minutes or until the top is golden brown.
  5. Allow it to cool completely before cutting into squares for serving.
