  • 1 can sweetened condensed milk (395g/14oz)
  • 3-4 teaspoons lemon extract
  • 540 g white chocolate (roughly chopped) (19oz)
  • 1 tablespoon lemon zest (finely grated)
  • 1 drop yellow gel food coloring optional
  • to taste sprinkles or decorations optional

Method
 

Preparation
  1. Line an 8-inch square baking pan with baking paper and set aside.
  2. In a medium saucepan, combine the sweetened condensed milk, 3 teaspoons of lemon extract, and a drop of yellow food coloring.
  3. Stir well to mix the ingredients.
  4. Add the chopped white chocolate to the pan and heat over low to medium flame, stirring continuously until fully melted and smooth.
  5. If using lemon zest, add it and taste to adjust lemon extract for desired flavor.
  6. Pour the mixture into the prepared pan and smooth it into an even layer.
  7. If using sprinkles, add them immediately and tap the pan gently on the countertop.
  8. Refrigerate the fudge until firm, approximately 4 hours or overnight, before cutting into squares.
