- Line an 8-inch square baking pan with baking paper and set aside.
- In a medium saucepan, combine the sweetened condensed milk, 3 teaspoons of lemon extract, and a drop of yellow food coloring.
- Stir well to mix the ingredients.
- Add the chopped white chocolate to the pan and heat over low to medium flame, stirring continuously until fully melted and smooth.
- If using lemon zest, add it and taste to adjust lemon extract for desired flavor.
- Pour the mixture into the prepared pan and smooth it into an even layer.
- If using sprinkles, add them immediately and tap the pan gently on the countertop.
- Refrigerate the fudge until firm, approximately 4 hours or overnight, before cutting into squares.
