  • 1/2 cup white chocolate chips or melting wafers For drizzling

Method
 

Preparation
  1. Grease a 9×9-inch baking pan or line it with parchment paper.
  2. In a large saucepan, melt the butter over low heat.
  3. Once melted, add the mini marshmallows and stir until fully melted and smooth.
  4. Incorporate the lemon zest and optional lemon extract, mixing well.
  5. Remove from heat and immediately fold in the Rice Krispies cereal, ensuring each piece is well coated.
  6. Press the mixture evenly into the pan using a buttered spatula or wax paper, avoiding pressing too firmly.
  7. Melt the white chocolate chips in the microwave, stirring in 20-second intervals until smooth.
  8. Drizzle the melted white chocolate over the bars and finish with a sprinkle of lemon zest or curls of lemon peel.
  9. Let the treats cool and set for at least 30 minutes before cutting into squares.
