Preparation
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Add the egg, lime Jello, and vanilla extract; mix until smooth and combined.
- In another bowl, whisk together flour, baking powder, and salt; gradually add this to the wet mixture and mix until just combined.
- Portion the dough into tablespoon-sized scoops, roll into balls, and if desired, coat with green sugar or sprinkles.
- Place the dough balls on a lined baking sheet, flatten slightly with the bottom of a glass to form cookie shapes.
- Bake for 8-10 minutes until edges are golden and centers are soft.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Store cooled cookies in an airtight container for up to 3 days, or freeze for longer storage. To keep them soft, include a slice of bread in the container.
