  • 2 cups all-purpose flour Sifted if lumpy for best results.
  • 1/2 cup sugar Coconut sugar can be used for a deeper flavor.
  • 1/2 cup butter, softened Unsalted preferred for better salt control.
  • 1 package (3 oz) lime Jello Any instant lime-flavored gelatin works.
  • 1 large egg Can be substituted with an egg replacer for vegan options.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt Add a pinch more if using salted butter.
  • Green sugar or sprinkles for decoration Optional, can use powdered sugar after baking.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the egg, lime Jello, and vanilla extract; mix until smooth and combined.
  4. In another bowl, whisk together flour, baking powder, and salt; gradually add this to the wet mixture and mix until just combined.
  5. Portion the dough into tablespoon-sized scoops, roll into balls, and if desired, coat with green sugar or sprinkles.
  6. Place the dough balls on a lined baking sheet, flatten slightly with the bottom of a glass to form cookie shapes.
  7. Bake for 8-10 minutes until edges are golden and centers are soft.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes
