Loaded Cowboy Queso Dip

This Tex-Mex inspired cheese dip combines rich Velveeta cheese with savory ground beef, black beans, corn, and Rotel tomatoes. It's creamy, bold, and perfect for parties or game day spreads.

Ingredients
  

  • 1 lb ground beef or sausage
  • 1 medium onion, chopped
  • 10 oz Rotel diced tomatoes with green chilies (do not drain)
  • 15 oz black beans, rinsed and drained
  • 15 oz corn, drained
  • 16 oz Velveeta cheese, cubed
  • 0.5 cup milk (optional, to thin)
  • 0.25 cup cilantro, chopped
  • as needed tortilla chips, for serving

Method
 

  1. Cook the ground beef or sausage with chopped onion in a skillet over medium heat until browned and the onion softens. Drain the grease.
  2. Stir in Rotel tomatoes, black beans, and corn. Let it simmer for 3 to 5 minutes to allow the flavors to meld.
  3. Lower heat and add Velveeta cheese cubes. Stir continuously until the cheese is fully melted and smooth.
  4. If the dip is too thick, slowly stir in milk until the desired consistency is reached.
  5. Garnish with chopped cilantro and serve hot with tortilla chips.

Notes

Use spicy sausage instead of ground beef for extra flavor. Add jalapeños or cayenne for heat. Keep warm in a slow cooker and stir in extra cheese or milk for the perfect consistency.
