Preparation
- If using frozen hash browns, prepare them according to package instructions until golden brown and crispy. Once done, set them aside.
- In a separate pan, scramble the eggs over medium heat until fully cooked. Season with salt and black pepper to taste, then set aside.
- Smash the avocado in a bowl using a fork until smooth. Season with additional salt and black pepper if desired.
Assembly
- Place the cooked hash browns on a serving plate and spread a layer of the smashed avocado over each.
- Divide the scrambled eggs evenly on top of the avocado layer on each hash brown.
- Spoon cottage cheese over the scrambled eggs.
- For an added flavor boost, sprinkle everything but the bagel seasoning on top if you are using it.
- Serve immediately and enjoy your loaded hash browns hot!
