Ingredients
  

Main Ingredients
  • 3 hash browns You can also use diced or sweet potatoes.
  • 3 eggs, scrambled Season with salt and black pepper.
  • 1 avocado, smashed Choose a ripe avocado.
  • 1/2 cup cottage cheese Can be substituted with Greek yogurt.
Seasonings
  • Everything But The Bagel seasoning (optional) Use for an added flavor boost.
  • Salt and black pepper To taste.

Method
 

Preparation
  1. If using frozen hash browns, prepare them according to package instructions until golden brown and crispy. Once done, set them aside.
  2. In a separate pan, scramble the eggs over medium heat until fully cooked. Season with salt and black pepper to taste, then set aside.
  3. Smash the avocado in a bowl using a fork until smooth. Season with additional salt and black pepper if desired.
Assembly
  1. Place the cooked hash browns on a serving plate and spread a layer of the smashed avocado over each.
  2. Divide the scrambled eggs evenly on top of the avocado layer on each hash brown.
  3. Spoon cottage cheese over the scrambled eggs.
  4. For an added flavor boost, sprinkle everything but the bagel seasoning on top if you are using it.
  5. Serve immediately and enjoy your loaded hash browns hot!

Notes
