Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, blend the flour, powdered sugar, and salt, then cut in the softened butter until crumbly.
- Add the egg yolk and cold water to form a cohesive dough.
- Roll out the dough and press it into a tart pan, and bake for 15-20 minutes or until golden brown.
Filling
- In a separate bowl, whisk together the mango puree, granulated sugar, eggs, lime juice, and lime zest.
- Once your crust has baked, pour the mango mixture into it and return to the oven for another 20-25 minutes until set.
- Allow the tart to cool before refrigerating it for at least 2 hours.
Serving
- Serve topped with whipped cream and fresh fruit.
