Ingredients
  

For the tart crust
  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter, softened
  • 0.25 cup powdered sugar
  • 0.25 teaspoon salt
  • 1 large egg yolk
  • 0.25 cup cold water
For the mango curd filling
  • 1 cup mango puree Use fresh mango for the best flavor.
  • 0.5 cup granulated sugar
  • 3 large eggs
  • 0.25 cup fresh lime juice
  • 1 tablespoon lime zest
For garnish
  • 1 cup heavy cream For topping.
  • 1 cup fresh fruit Optional, for topping.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, blend the flour, powdered sugar, and salt, then cut in the softened butter until crumbly.
  3. Add the egg yolk and cold water to form a cohesive dough.
  4. Roll out the dough and press it into a tart pan, and bake for 15-20 minutes or until golden brown.
Filling
  1. In a separate bowl, whisk together the mango puree, granulated sugar, eggs, lime juice, and lime zest.
  2. Once your crust has baked, pour the mango mixture into it and return to the oven for another 20-25 minutes until set.
  3. Allow the tart to cool before refrigerating it for at least 2 hours.
Serving
  1. Serve topped with whipped cream and fresh fruit.
