Ingredients
  

For the marinade
  • 1 lb sirloin steak (about 1-inch thick)
  • 3 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 tbsp lemon juice (fresh)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
For the bowl
  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup roasted chickpeas (optional for paleo or keto)
  • 1 cup cherry tomatoes (halved)
  • 1 whole cucumber (diced)
  • ½ whole red onion (thinly sliced)
  • ½ cup kalamata olives (pitted)
  • cup feta cheese (crumbled; optional for dairy-free)
  • ¼ cup fresh herbs (parsley or dill, chopped)
For the tzatziki sauce
  • 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
  • ½ whole cucumber (grated, squeezed dry)
  • 1 tbsp lemon juice (fresh)
  • 1 clove garlic (minced)
  • 1 tbsp fresh dill (chopped)
  • to taste Salt & pepper
For the vinaigrette
  • 3 tbsp olive oil
  • 2 tbsp lemon juice (fresh)
  • 1 tsp honey (omit for Whole30)
  • 1 clove garlic (minced)
  • ½ tsp dried oregano
  • to taste Salt & pepper

Method
 

Marinate the steak
  1. In a bowl, mix together the marinade ingredients: olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Coat the sirloin steak well and let it marinate for 30 minutes to 4 hours for the best flavor.
Prepare tzatziki sauce
  1. To prepare the tzatziki sauce, combine Greek yogurt, grated cucumber, lemon juice, minced garlic, fresh dill, and a pinch of salt and pepper. Chill it in the fridge until ready to serve.
Prepare vinaigrette
  1. For the vinaigrette, whisk together olive oil, lemon juice, honey (if using), minced garlic, and oregano. Set aside.
Cook the steak
  1. Heat a skillet over high heat. Sear the marinated steak for about 4–5 minutes on each side, or until it reaches your desired doneness. Allow it to rest for a few minutes, then slice it thinly against the grain.
Assemble the bowl
  1. In bowls, layer the cooked grains, sliced steak, and your chosen toppings, including cherry tomatoes, diced cucumber, red onion, olives, herbs, and feta cheese. Drizzle with tzatziki sauce and vinaigrette just before serving.
