- Cream the softened butter and sugar together in a large bowl until fluffy. Add the egg and vanilla, mixing until fully combined. In another bowl, whisk flour, baking powder, and salt. Gradually combine the dry and wet ingredients to form a soft dough. Chill for 15 minutes if sticky.
- Preheat oven to 350°F (175°C). Line a baking tray with parchment. Roll dough into balls, flatten slightly, and place on tray. Bake 10–12 minutes or until edges are lightly golden.
- Cool biscuits completely on a wire rack. Mix icing sugar with milk or water gradually until thick and smooth.
- Spoon icing over each biscuit and let it spread naturally. Place a marshmallow off-center while icing is still wet. For a melted look, microwave marshmallows for a few seconds first.
- Decorate each snowman: use black icing for eyes and buttons, orange icing for noses, and optional candies. Allow to set.
