- In a bowl, combine diced apples, brown sugar, cinnamon, nutmeg, allspice, ginger, and a pinch of salt. Stir in the butter, vanilla extract, and cornstarch slurry until well combined.
- Dust your work surface with all-purpose flour. Roll out the premade pie dough and cut it into circles about 4-5 inches in diameter.
- Preheat your oven to 375°F (190°C). Place a dough circle in a greased muffin tin.
Assembly
- Fill each with the apple mixture, cover with another dough circle, crimp the edges, and cut slits on top to allow steam to escape.
- Brush the tops with the egg mixture and sprinkle with coarse brown sugar.
Baking
- Place in the oven and bake for 20-25 minutes or until golden brown. Let them cool slightly before serving.
