Ingredients
  

Apple Filling Ingredients
  • 2 medium medium-sized apples, peeled, cored, and diced
  • cup brown sugar
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp allspice
  • ¼ tsp ground ginger
  • a pinch salt
  • 1 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch slurry
Dough and Toppings
  • 1 package premade pie dough (contains 2 crusts) Available in stores
  • 1 tbsp all-purpose flour for dusting
  • 1 beaten egg mixed with 1 tbsp milk, cream, or water (for egg wash)
  • coarse brown sugar for sprinkling on top

Method
 

Preparation
  1. In a bowl, combine diced apples, brown sugar, cinnamon, nutmeg, allspice, ginger, and a pinch of salt. Stir in the butter, vanilla extract, and cornstarch slurry until well combined.
  2. Dust your work surface with all-purpose flour. Roll out the premade pie dough and cut it into circles about 4-5 inches in diameter.
  3. Preheat your oven to 375°F (190°C). Place a dough circle in a greased muffin tin.
Assembly
  1. Fill each with the apple mixture, cover with another dough circle, crimp the edges, and cut slits on top to allow steam to escape.
  2. Brush the tops with the egg mixture and sprinkle with coarse brown sugar.
Baking
  1. Place in the oven and bake for 20-25 minutes or until golden brown. Let them cool slightly before serving.
