Ingredients
  

  • 1 package (2 sheets) puff pastry sheets
  • 8 oz mini Brie cheese, cut into cubes
  • 0.5 cup cranberry sauce or fig jam
  • 1 tbsp fresh thyme, chopped
  • 0.25 cup chopped nuts (walnuts or pecans)
  • 1 large egg, beaten
  • salt and pepper, to taste

Method
 

  1. Preheat oven to 375°F (190°C) and lightly grease a mini muffin pan.
  2. Cut puff pastry into 2-inch squares and gently press each square into the mini muffin cups.
  3. Add a cube of mini Brie to the center of each pastry cup.
  4. Spoon a small amount of cranberry sauce or fig jam over the Brie.
  5. Sprinkle with thyme and chopped nuts if using.
  6. Brush the pastry edges with beaten egg for a golden finish.
  7. Bake for 12–15 minutes or until pastry is puffed and golden brown.
  8. Let cool slightly and serve warm.
