  • 1 cup almond meal Can substitute with almond flour or gluten-free flour
  • 1/2 cup coconut oil, melted
  • 1/4 cup maple syrup High-quality pure syrup recommended
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
For the Lemon Filling
  • 1/2 cup lemon juice Fresh is best
  • 1 tablespoon lemon zest
  • 1/4 cup cornstarch
  • 1/4 cup water
  • 2 tablespoons agave syrup Optional for a sweeter filling

Method
 

Preparation of the Crust
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, blend together almond meal, melted coconut oil, maple syrup, vanilla extract, and salt until it forms a cohesive dough.
  3. Press this mixture firmly into the cups of the muffin tin to create uniform crusts.
  4. Bake these for about 10-12 minutes, or until they are golden.
Preparation of the Lemon Filling
  1. In a saucepan over medium heat, mix lemon juice, lemon zest, cornstarch, and water.
  2. Stir continuously until the mixture thickens. If you prefer a sweeter filling, add in the optional agave syrup to your taste.
  3. Pour the filling into the cooled crusts.
  4. Refrigerate the tarts until they are set to your liking.
