Ingredients
  

For the crust
  • 2 cups graham cracker crumbs
  • 1/2 cup sugar (for crust)
  • 1/2 cup unsalted butter, melted
For the filling
  • 4 packages cream cheese, softened (8 ounces each)
  • 1 cup sugar (for filling)
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream (optional, for topping)

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs, 1/2 cup sugar, and melted butter until fully mixed. Press this mixture firmly into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the packages of softened cream cheese until nice and smooth.
  4. Gradually mix in 1 cup sugar, continuing to beat until blended.
  5. Stir in vanilla extract until it’s well incorporated.
  6. Add eggs, one at a time, mixing well after each addition.
  7. Pour the cream cheese mixture over your crust in the springform pan, smoothing the top with a spatula.
Baking
  1. Bake for 55-60 minutes or until the center feels set with a slight jiggle.
  2. Remove from the oven and allow to cool to room temperature.
  3. Refrigerate for at least 4 hours or overnight for deeper flavor.
  4. Optionally, spread sour cream over the top before serving.

Notes
