Old Fashioned Taffy Apple Salad

Ingredients
  

  • 1 can (20 oz) pineapple chunks, drained and juice reserved
  • 2 boxes (3.4 oz) vanilla instant pudding mix
  • 1 container (12 oz) Cool Whip, thawed
  • 3 Honeycrisp apples, chopped
  • 1 cup salted peanuts

Method
 

  1. Drain the canned pineapple, reserving the juice. Set chunks aside.
  2. In a mixing bowl, whisk the reserved pineapple juice with the vanilla pudding until smooth. Let it sit for about 5 minutes to thicken.
  3. Fold in the Cool Whip until creamy.
  4. Gently stir in the chopped apples and pineapple chunks.
  5. Cover and refrigerate for at least 1 hour so flavors blend.
  6. Right before serving, sprinkle with salted peanuts for crunch.
