Ingredients
  

  • 1 pound ground beef
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 14 oz can diced tomatoes
  • 2 tbsp tomato paste
  • 6 cups beef broth
  • 2 cups macaroni pasta
  • 1 tbsp Italian seasoning
  • Salt and pepper, to taste
  • Optional: peas, zucchini, spinach, or cream

Method
 

  1. In a large pot, cook the ground beef until browned and crumbled. Drain excess fat if needed.
  2. Add the onion, garlic, carrots, and celery. Cook until fragrant and tender.
  3. Stir in diced tomatoes and tomato paste, letting it cook for a couple of minutes.
  4. Pour in the broth and season with herbs, salt, and pepper. Bring to a boil.
  5. Stir in the macaroni and cook until al dente, about 10 minutes.
  6. Taste and adjust seasoning. Add cream at the end if desired for a creamy version.
  7. Serve immediately with fresh bread or your favorite sides.
