Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut the carrots into equal-sized pieces.
  3. In a mixing bowl, combine the carrots with olive oil, minced garlic, salt, and pepper for thorough coating.
Cooking
  1. Spread the seasoned carrots on a baking sheet in a single layer.
  2. Roast for about 20-25 minutes, stirring halfway through.
  3. During the last few minutes of cooking, sprinkle the grated Parmesan cheese on top and return to the oven until bubbly and golden.
