  • 1 large egg Provides binding.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease an 8x8 inch baking dish.
  2. In a medium bowl, mix diced peaches with granulated sugar, lemon juice, and vanilla extract; set aside.
  3. In another bowl, whisk flour, oats, brown sugar, baking powder, and salt.
  4. Cut in softened butter until the mixture resembles coarse crumbs.
  5. Press half of the crumb mixture into the bottom of the prepared baking dish.
Assembly
  1. Spread the peach filling evenly over the crumb base.
  2. Dollop spoonfuls of softened cream cheese over the peaches.
  3. In a separate bowl, beat the egg and mix it with the remaining crumb mixture, then crumble it over the top.
  4. Bake for 35-40 minutes until golden brown and bubbly around the edges.
  5. Allow to cool before cutting into squares.
