Preparation
- Preheat the oven to 350°F (175°C) and grease an 8x8 inch baking dish.
- In a medium bowl, mix diced peaches with granulated sugar, lemon juice, and vanilla extract; set aside.
- In another bowl, whisk flour, oats, brown sugar, baking powder, and salt.
- Cut in softened butter until the mixture resembles coarse crumbs.
- Press half of the crumb mixture into the bottom of the prepared baking dish.
Assembly
- Spread the peach filling evenly over the crumb base.
- Dollop spoonfuls of softened cream cheese over the peaches.
- In a separate bowl, beat the egg and mix it with the remaining crumb mixture, then crumble it over the top.
- Bake for 35-40 minutes until golden brown and bubbly around the edges.
- Allow to cool before cutting into squares.
