  • 1/2 cup honey Can substitute with maple syrup for a vegan option.
  • 2 cups rolled oats
  • 1/2 cup chocolate chips Use dark or semi-sweet chips for varied sweetness.
  • 1/4 cup ground flaxseed
  • 1 teaspoon vanilla extract

Method

Preparation
  1. In a large bowl, combine the peanut butter and honey. Mix until smooth and creamy; this should take about a minute.
  2. Add in the rolled oats, chocolate chips, ground flaxseed, and vanilla extract. Stir gently until well combined.
  3. Use your hands to scoop and roll the mixture into small balls, about 1 inch in diameter.
  4. Place the energy balls on a baking sheet lined with parchment paper to prevent sticking.
  5. Refrigerate for at least 30 minutes to set. This helps them firm up and makes them easier to eat.
  6. Once set, transfer to an airtight container for storage.
