  • 1/2 teaspoon vanilla extract
  • 1 pinch salt

Preparation
  1. In a large bowl, combine the peanut butter, oats, chia seeds, flaxseed meal, shredded coconut, honey, vanilla extract, and salt. Mix thoroughly until everything is well incorporated.
  2. Once the mixture is combined, use your hands to form small balls, about 1 inch in diameter.
  3. Place the energy bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm them up.
  4. Store the energy bites in an airtight container in the refrigerator. They will remain fresh for up to a week.
