Ingredients
  

For the cookies
  • 1 cup unsalted butter (or vegan butter) Substitute with vegan butter for a dairy-free option
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 1/2 cup chopped pecans Can be swapped with other nuts
  • 1/4 cup corn syrup
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and brown sugar until fluffy.
  3. Add in the vanilla extract and mix well.
  4. In a separate bowl, combine the flour, baking powder, salt, and cinnamon. Gradually mix these dry ingredients into the wet mixture until well combined.
  5. Fold in the chopped pecans until evenly distributed.
  6. Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
  7. In a small bowl, mix the corn syrup with additional pecans, and spoon a small amount over each cookie.
  8. Bake for 12-15 minutes or until the edges are golden.
  9. Allow to cool before serving.
