  • 1 cup Greek yogurt Full-fat recommended for creaminess.
  • 1/2 cup almond flour Can be substituted with oat flour for gluten-free.
  • 1/4 cup honey or maple syrup Agave syrup can be used for a vegan option.
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup chocolate chips Optional, but highly recommended!

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the Greek yogurt, almond flour, honey (or maple syrup), egg, and vanilla extract. Mix until the batter is smooth and well-blended.
  3. Add the baking powder and salt, stirring until fully incorporated into the mixture.
  4. If using, gently fold in the chocolate chips.
  5. Scoop out tablespoon-sized amounts of dough and place them on a baking sheet lined with parchment paper, ensuring there’s spacing between each dollop.
  6. Bake your cookies for 12-15 minutes, or until the edges turn a lovely golden brown.
  7. Let them cool for a few minutes before serving.
