Pumpkin Whipped Feta Dip

Ingredients
  

  • 8 oz block feta cheese
  • 1/2 cup pumpkin puree (pure, not pie filling)
  • 2 tbsp olive oil, plus more for garnish
  • 1–2 cloves garlic (roasted or fresh)
  • 1/2 tsp dried oregano
  • 1/4 tsp ground cinnamon (optional)
  • 1 pinch red pepper flakes
  • salt and black pepper, to taste
  • pumpkin seeds or fresh herbs (for garnish)

Method
 

  1. Place crumbled feta, pumpkin puree, olive oil, garlic, oregano, cinnamon, and red pepper flakes into a food processor.
  2. Blend until smooth and creamy, scraping down the sides as needed.
  3. Taste and season with salt and pepper. Add more olive oil if a softer texture is desired.
  4. Transfer to a bowl. Garnish with olive oil drizzle, pumpkin seeds, or chopped herbs.

Notes
