  • 1 loaf loaf of brioche or challah bread, cubed Use day-old bread for best texture.
  • 2 cups fresh blueberries Can substitute with raspberries or strawberries.
  • 6 large large eggs
  • 2 cups milk Can substitute with almond milk for dietary restrictions.
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • Optional to taste Powdered sugar for serving

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, whisk together the eggs, milk, maple syrup, vanilla, cinnamon, and salt until smooth.
  3. Layer the cubed bread evenly in the prepared baking dish and sprinkle the blueberries over the top.
  4. Pour the egg mixture evenly across the bread and blueberries, pressing down lightly to ensure the bread is soaked.
  5. Let the mixture sit for about 15 minutes to absorb the flavors.
  6. Bake for 45-50 minutes, or until the casserole is golden brown and set in the center.
  7. Allow it to cool slightly before serving, and dust with powdered sugar if desired.
