Rainbow Popsicle Dragon Fruit

These creamy rainbow popsicles are layered with banana-yogurt goodness and vibrant real fruits like dragon fruit, strawberries, mango, pineapple, kiwi, and spirulina. A healthy, colorful treat for hot days or anytime you want to eat the rainbow!

Ingredients
  

  • The Creamy Base For Every Layer
  • 3 ripe bananas sliced (the browner the spots, the sweeter the popsicle)
  • 1 ½ cups plain Greek yogurt or full-fat coconut yogurt for a vegan option
  •  
  • The Fruit & Color for Each Layer
  • Red Layer: 1 cup strawberries fresh or frozen
  • Orange Layer: 1 cup mango chunks fresh or frozen
  • Yellow Layer: 1 cup pineapple chunks fresh or frozen
  • Green Layer: 1 cup kiwi or honeydew melon plus ½ tsp moringa or spinach powder (optional, for vibrant color)
  • Blue Layer: 1 tsp blue spirulina powder
  • Magenta Layer: 1 cup chopped red dragon fruit pitaya (fresh or frozen)

Method
 

  1. 1. Blend each fruit layer separately with ½ banana and ¼ cup yogurt. Rinse blender between colors.
  2. 2. Magenta Layer: Blend dragon fruit, banana, yogurt. Set aside.
  3. 3. Red Layer: Blend strawberries, banana, yogurt. Set aside.
  4. 4. Orange Layer: Blend mango, banana, yogurt. Set aside.
  5. 5. Yellow Layer: Blend pineapple, banana, yogurt. Set aside.
  6. 6. Green Layer: Blend kiwi or honeydew, banana, yogurt, and moringa/spinach if using. Set aside.
  7. 7. Blue Layer: Blend remaining banana, yogurt, and spirulina powder. Set aside.
  8. 8. Spoon 1–2 tablespoons of magenta layer into each popsicle mold. Tap to level. Freeze for 30–45 minutes.
  9. 9. Repeat for each color layer in order: red, orange, yellow, green, blue. Freeze between each.
  10. 10. Insert sticks after last layer. Freeze at least 6 hours or overnight.
  11. 11. To unmold, run warm water over the molds for 10–15 seconds and gently release.

Notes

You can swap out any fruit for similar colored alternatives—think blueberries instead of spirulina for blue, or papaya instead of mango for orange.
Use silicone molds for easier unmolding.
For extra sweetness, add 1–2 teaspoons of honey or agave to any fruit layer.
