For the Ricotta Bites
  • 1 cup ricotta cheese Use creamy, full-fat ricotta for the best flavor.
  • 1/2 cup all-purpose flour Can be substituted with a gluten-free flour blend.
  • 1/4 cup sugar Reduce to 2 tablespoons for lower sugar option.
  • 1 egg Large egg, room temperature preferred.
  • 1/2 teaspoon vanilla extract Enhances flavor.
  • 1/2 cup crushed pistachios Lightly toast for extra depth.
  • 1/4 cup honey Use high-quality honey for the best finish.
  • 1 pinch salt
  • 1 Butter or oil For greasing the baking dish.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and position a rack in the center.
  2. In a mixing bowl, stir together the ricotta, all-purpose flour, sugar, egg, vanilla extract, and a pinch of salt until smooth.
  3. Grease a baking dish with butter or oil.
  4. Spoon the ricotta mixture into small mounds in the prepared dish, spacing them slightly apart.
  5. Sprinkle the crushed pistachios generously over each mound.
Baking
  1. Bake in the preheated oven for 20–25 minutes, or until the tops are lightly golden and the centers are set.
  2. Remove from the oven and immediately drizzle each warm bite with honey.
Serving
  1. Serve warm or cooled to room temperature, optionally garnished with additional crushed pistachios.
