An indulgent combination of buttery crust, luscious caramel, coconut, and chocolate drizzle inspired by the beloved Girl Scout cookie.

Ingredients
  

For the crust
  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened Ensure butter is adequately softened.
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
For the filling
  • 1 cup caramel sauce Store-bought caramel can be used for convenience.
  • 1 cup shredded coconut
  • 1 cup chocolate chips Can be swapped with white chocolate for a variation.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a pie pan.
  2. In a large mixing bowl, combine the softened butter, brown sugar, granulated sugar, and vanilla extract. Mix until smooth and creamy.
  3. Gradually incorporate the flour and salt until a cohesive dough forms.
  4. Press the dough evenly into the bottom and up the sides of your prepared pie pan.
  5. Bake for 20-25 minutes or until lightly golden. Let it cool on a wire rack.
Assembly
  1. Once cooled, spread the caramel sauce evenly over the crust.
  2. Sprinkle the shredded coconut on top of the caramel layer.
  3. Melt the chocolate chips in the microwave or over a double boiler, then drizzle them over the coconut layer.
  4. Allow the pie to set before slicing.

Notes
