Sausage Green Bean Potato Casserole

Ingredients
  

  • 2 pounds red potatoes, diced
  • 1 pound ground sausage (spicy, Italian, or mild)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cans cream of mushroom soup (10.5 oz each)
  • 0.5 cup milk (whole or 2%)
  • 1 can green beans, drained (14.5 oz)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp Cajun seasoning (optional)
  • 2 cups sharp cheddar cheese, shredded (divided)

Method
 

  1. Preheat oven to 375°F and grease a 9x13-inch baking dish.
  2. Boil diced potatoes until fork-tender, about 10–12 minutes. Drain and place in baking dish.
  3. In a skillet over medium heat, brown the sausage with chopped onion until no longer pink. Drain any excess grease.
  4. Add garlic, cream of mushroom soup, milk, salt, pepper, and Cajun seasoning to the skillet. Stir until well combined.
  5. Stir in green beans and 1 cup of shredded cheddar cheese until creamy.
  6. Pour sausage mixture over potatoes in the baking dish. Gently mix to combine.
  7. Top with remaining 1 cup of shredded cheese. Bake uncovered for 25–30 minutes until bubbly and golden.
  8. Let cool slightly before serving warm.

Notes
