- Preheat oven to 375°F and grease a 9x13-inch baking dish.
- Boil diced potatoes until fork-tender, about 10–12 minutes. Drain and place in baking dish.
- In a skillet over medium heat, brown the sausage with chopped onion until no longer pink. Drain any excess grease.
- Add garlic, cream of mushroom soup, milk, salt, pepper, and Cajun seasoning to the skillet. Stir until well combined.
- Stir in green beans and 1 cup of shredded cheddar cheese until creamy.
- Pour sausage mixture over potatoes in the baking dish. Gently mix to combine.
- Top with remaining 1 cup of shredded cheese. Bake uncovered for 25–30 minutes until bubbly and golden.
- Let cool slightly before serving warm.

Use spicy sausage for extra flavor. For a lighter version, opt for turkey sausage and low-fat cheese. Fresh green beans or frozen can be substituted — just blanch before baking. Add jalapeños or Cajun seasoning for a spicier kick, or top with breadcrumbs or fried onions for a crunchy finish.
