  • 1 pound sausage (Italian sausage works great)
  • 1 package three-cheese tortellini
  • 2 medium sweet potatoes, diced
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream For a lighter version, consider coconut milk.
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large pot, brown the sausage over medium heat until it’s cooked through and crispy.
  2. Add the diced sweet potatoes and minced garlic, sautéing until the sweet potatoes are tender, about 10 minutes.
  3. Pour in the broth, bringing the mixture to a simmer.
  4. Add the tortellini and cook according to package instructions, usually around 5-7 minutes.
  5. Stir in the fresh spinach and heavy cream, cooking until the spinach wilts.
  6. Season with salt and pepper to taste. Serve warm, and enjoy!
