Preparation
  1. Begin by boiling the red potatoes until fork-tender, which takes about 15-20 minutes.
  2. Dice the boiled potatoes into bite-sized pieces.
  3. While the potatoes are cooking, heat a skillet over medium heat.
  4. Add the ground beef seasoned with Cajun spice and cook until browned, about 8-10 minutes.
  5. In the same pan, sauté diced onions until lightly caramelized, about 5-7 minutes.
