Preparation
- Combine the applesauce, sugar, lime Jell-O powder, and both packs of unflavored gelatin in a medium saucepan.
- Heat the mixture over medium-high, stirring constantly until everything melts and the liquid comes to a boil.
- Once it reaches a full boil, let it boil for one minute while continuing to stir.
- Remove the pan from the heat and pour the hot mixture into a 13x9 baking dish lined with parchment paper.
- Transfer the baking dish to the refrigerator and chill until fully set, about 2 hours.
Cutting and Coating
- When set, lift the slab from the pan using the parchment.
- Dust the top lightly with sugar and cut out shapes with the shamrock cookie cutter, dipping the cutter in sugar between cuts.
- Roll the bottom and sides of each cut gummy in granulated sugar to coat.
- Set the finished shamrocks on a parchment-lined cookie sheet to dry briefly.
