Ingredients
  

Main Ingredients
  • 1.5 cups Applesauce Use unsweetened for clearer flavor control.
  • 2.25 cups Sugar Keep extra granulated sugar for coating.
  • 2 boxes Lime Jell-O (3 oz boxes) Swap with lemon or orange for different flavors.
  • 2 packs Unflavored Gelatin Increase for firmer gummies; reduce for softer.
Tools
  • 1 unit Shamrock Cookie Cutter Dust with sugar to prevent sticking.

Method
 

Preparation
  1. Combine the applesauce, sugar, lime Jell-O powder, and both packs of unflavored gelatin in a medium saucepan.
  2. Heat the mixture over medium-high, stirring constantly until everything melts and the liquid comes to a boil.
  3. Once it reaches a full boil, let it boil for one minute while continuing to stir.
  4. Remove the pan from the heat and pour the hot mixture into a 13x9 baking dish lined with parchment paper.
  5. Transfer the baking dish to the refrigerator and chill until fully set, about 2 hours.
Cutting and Coating
  1. When set, lift the slab from the pan using the parchment.
  2. Dust the top lightly with sugar and cut out shapes with the shamrock cookie cutter, dipping the cutter in sugar between cuts.
  3. Roll the bottom and sides of each cut gummy in granulated sugar to coat.
  4. Set the finished shamrocks on a parchment-lined cookie sheet to dry briefly.

Notes
