  • 1 pound Italian sausages Choose spicy or sweet based on preference.
  • 2 pieces bell peppers, mixed colors, diced
  • 1 piece zucchini, sliced
  • 1 piece red onion, wedged
Seasoning and Oil
  • 2 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Lightly grease a large baking sheet with cooking spray or olive oil.
  2. Chop the bell peppers, zucchini, and red onion into even pieces for consistent roasting.
  3. Arrange the whole Italian sausages on top of the veggies, ensuring they are in a single layer.
  4. Drizzle the olive oil over the mixture. Sprinkle the Italian seasoning, along with salt and pepper, to taste. Toss gently to coat everything evenly.
Cooking
  1. Roast in the preheated oven for 25-30 minutes. You’ll know it’s done when the sausages are browned and the veggies are tender.
  2. For an extra flavor boost, you can add fresh herbs during the last five minutes of roasting.

Notes
