Main Ingredients
  • 1 lb Ground beef (or turkey) Can be substituted with ground turkey for a healthier option.
  • 1 can Canned tomatoes (diced or crushed) Either option works well.
  • 1 can Kidney beans (or your favorite beans) Black beans or garbanzo beans can also be used.
  • 1 large Onion Chop finely.
  • 3 cloves Garlic Minced.
  • 2 medium Bell peppers Chopped.
  • 2 tbsp Oil for sautéing Can use olive or vegetable oil.
  • 2 tbsp Chili powder Adjust to taste.
  • 1 tbsp Cumin
  • 1 tbsp Paprika
  • 1 tsp Salt To taste.
  • 1 tsp Pepper To taste.

Method
 

Preparation
  1. In a skillet over medium heat, add oil and sauté the onions and garlic until golden and aromatic, around 3 minutes.
  2. Add the ground beef to the skillet and cook until browned, roughly 5 minutes. Drain any excess fat.
  3. Transfer the meat mixture to the slow cooker.
  4. Add the canned tomatoes, your choice of beans, chopped bell peppers, and all the spices. Stir well to combine.
Cooking
  1. Set your slow cooker to low for 6-8 hours or high for 3-4 hours.
  2. Stir halfway through cooking to evenly distribute the flavors.
  3. Before serving, adjust salt and pepper to taste.
