  • 1 lb ground beef Can be swapped for turkey or a plant-based protein.
  • 1 can kidney or black beans, drained and rinsed
  • 1 can diced tomatoes
  • 2 tablespoons homemade chili seasoning Store-bought chili seasoning is a good substitute.
  • 1 onion chopped
  • 1 bell pepper chopped
  • to taste salt and pepper

Method
 

Preparation
  1. In a skillet over medium heat, begin browning the ground beef until it’s fragrant, with a lovely brown color—this should take about 5-7 minutes. Make sure to drain any excess fat.
  2. Transfer the browned beef into your slow cooker.
  3. Add in the drained beans, diced tomatoes, chopped onion, chopped bell pepper, and your homemade chili seasoning.
  4. Give it a good stir until all ingredients are evenly combined. Season with salt and pepper to your liking.
  5. Cover the slow cooker and set it to cook on low for 6-8 hours or high for 3-4 hours.
  6. When it’s ready, serve hot and consider adding fresh cilantro, shredded cheese, or a dollop of sour cream for that extra touch.
